Bain Maries
Bain maries are a type of heated bath used to heat materials or ingredients gently and gradually, or to keep materials warm over a period of time. In catering, bain maries are used in batch cooking ensure foods retain their texture, temperature and flavour for long periods of time. Bain maries are available in both gas and electric with common types being bain marie with pans, ban marie with taps, bain marie with round pains, ban marie with taps and pans, single pot ban marie, two pot ban marie and four pot ban marie. Ban maries are commonly found in buffet style restaurants including canteens and cafeterias.
